Provided your songs make use of the stereo (like say you have hihats on the left speaker), then it'll record both speakers.
But as I said, GoldWave doesn't need to record; it extracts the audio in the video and you can mp3 it there.

Audacity is actually very easy to use. Although if you're working with Windows Movie Maker, it's not going to work.
Although I won't be proviing screenshots, I don't know if this'll make the answer more useful. (and plus I don't use easycap)

In Windows Movie Maker, export the video as normal, then get GoldWave. (don't worry, it may be shareware but you can use program as long as you want)
Then import the .WMV file into GoldWave and Export it as an mp3 there.

= The Last Battle =
Very good, for some reason I'm getting a big progressive vibe from it (y'know, unconventional time signatures, that sort of thing). I'm also intruiged on how you got that power-chord-esque guitar effect, but as it's the PC version, I guess that that version has expansion packs or something. Only bug I have is that the end drags on a bit. 9/10

= Consequences =
Again, a good song. The tempo is spot on, I can't hear any flaws so far, although it could do with a lyric track, as there are definate sections that denote chorus and verses. 8/10

= Defy =
As soon as you hit play, it goes straight ino the song, and right then, I'm loving it. How you were able to create this in an hour astounds me; it usualy takes me a day or so. The solo bass hits at just the right time, cresendoing into the next part is just... wow. 9/10

= Hiding the Sun =
...Woah. You just know this program inside and out. Again, that guitar sound I want *_* (for reference, I have the PSX version) lol i hear e1m1 @ 2:20, nice Doom reference. 9/10

= Fake =
Groovy melody going on there, good choice of riffs, and with Consequences, a vocal track on this would be great, with the definate verse and chorus sections. Overall, very good. 8/10.

Even WMM is the only video editting software I have, it's not that good. Case in point; I had to restart it 5 times to create 1 video. Thank goodness for AutoRecovery (it might do it on the Vista version as well)...

Like I said, maybe if the times of each section of the mix was posted up, It'd be easier to put together (Like what I did to my Infinity Part 1 mix; although initially 12 minutes long, I posted the length of each section for the sake of letting others know which section's which)

What about us who use a slightly different cabling to the "dual A/V" cable? My PSX uses just the one plug and socket. (though it has an adapter so the analogue aerial can be plugged in as well)

Also, will the 3.5mm-3.5mm cable actually cause mono sound? Wouldn't it depend if the TV was mono itself? (Also, there is an option in Audacity to record in Stereo, but it has a slight delay of ~0.1 second.)

Would it be possible to have each track seperate; or to keep the whole "mixiness", give the times of each track change?

(Apologies for the bump)
I've found a more practical solution, and plus it circumnavigates the hassle of creating each riff twice.

1. Create and record the song as you would.
2. In Audacity, open the file and click on the stereo track itself.
3. Go to Edit > Duplicate (Or hit CTRL+D)
4. Pan one track 100% to the Left and the other 100% to the Right.
5. Click on the top track to deselect the bottom.
6. Zoom in as far as you can, so you can see each indivdual sound-variation...thing (*doesn'tknow the term for it*)
7. Because for some reason, it zooms to the middle of the song. Click on the Skip to Start button (looks like a purple "|<<")
8. Now select from 0.000000 to 0.001000 (it'll go to 0.001010, but don't worry about that)*
9. Delete the selection and your sound will now be in stereo!

(I'd provide video footage proving this theory, but my screen recorder doesn't record sound. :P)

*I've been experimenting with how much you can delete without it being noticable; I think you can go as far as 0.001010, but I can notice the slight delete, even at 0.00005 seconds being deleted (and that's as little as you can delete)

I've editted the links for Sometimes it Amazes Me and 1512007, though I'm not entirely sure whether they work or not, or maybe because the WMP11 plugin doesn't like Firefox. :P

I've alredy posted one/two song(s) of mine (I'm not 100% proud of it, but it's probably the longest ever song made on it (12:32)), but I'll post a couple other ones (the free track(s) from the upcoming /0)

And I think the MTVMG files might be compatible with Music 2000; my ePSXe has Region auto-detect switched on, and really it's the same game, so I can't see why it can't. I'll give it a shot and see if it does work.

As for the site being down thing, I'm probably going to switch servers again; a few other people have said it doesn't load for them, yet it loads fine for me (and it can't be loading via cookies, I've just accessed it for the first time since my harddrive had to be reformatted.

I go by many names online; "NaN", "Not a Number", "/0", "Neo 2.3 Hylan" (or just "Neo" or "Hylan"). Either one'll do, chances are I'll recognise who you'll be talking about when either name is said. ;)

I discovered this site a few days ago through random YouTube videos of Music 2000. I've been using it since 2000, though I've been using it predominately since last year on an emulator (I don't know where in this part of the UK I can get 3.5mm Audio-in cables plus I'd need loads more Memory Cards)

At the moment I'm using Music 2000 for creating my first album "/0", which I'm hoping to ship out in the summer this year (2008); although it'll be my third release, as I've released 2 EPs before, but I class them as old material, as they don't represent NaN (one's acoustic guitar, the other's re-released material dating from 2005)

...and I think of run out of things to say here.. so......

Oh, what music software do I use? Predominately Music 2000 (PSX, run on an emulator), though I'm thinking of starting to use FL Studio, but until I get the, er... "resources" to get it, I'm using the former.

Note: Both songs were created on Music 2000 for the PSX, although the game itself was run on a PlayStation emulator, so the songs may skip a little.

Description:
The first part of the Infinity suite; each section revolves around the concept of "everything lasts forever", thus the name "Infinity". I was originally going to record a vocal section (sung by yours truly :D), but due to the fact that Section IV was way too long (I was hoping on having Part 1 being 12:00 exactly) and Part 2 being too short, this song was scrapped and rewritten (I've already recorded the new Part 1 and am in the process of creating Part 2), which is a shame because I was quite proud of some of this song (Especially when I'm not very good at creating instrumental sections anyway).
- I was going to have more instruments playing, but I ran out of sound memory (Taking up 2 Blocks)
- I took a lot of inspiration from the song Octavarium by Dream Theater; this can be seen from the fading-in synth chord at the start, the sudden change of riff between the sections "One" and "Always Here".
